Yesterday, EverBeautiful.com printed a provoking infographic that showed how many calories are in your Thanksgiving meal and how much exercise you’d need to do to burn them off.
Today, I’m offering two dessert recipes using tofu (House Foods tofu is a good one to try) to lighten your Thanksgiving dinner’s caloric load.
For the chocolate lovers at the table, whip up Chocolate Raspberry Ganache Tofu Tart. Simply mix House Foods Organic or Premium Tofu Soft with semi sweet chocolate chips and sugar. Then top with fresh raspberries for a flavorful, yet light dessert, that won’t have you loosening your belt. (Note: Can’t find House Foods tofu? Use your favorite brand instead.)
Or how about baking a batch (or two) of Pecan Tofu Cookies with the kids? Combine House Foods Organic or Premium Tofu Soft with sugar, flour, baking powder and pecans to create a delicious batch of cookies. Next whip together powdered sugar, low-fat milk and your favorite food coloring to make the frosting. Finally, have the kids decorate each cookie for a colorful finger licking treat for all to enjoy.
Chocolate Raspberry Ganache Tofu Tart
INGREDIENTS:
For Chocolate Filling:
1 pkg. House Foods Premium or Organic Tofu Soft (or other brand)
1 1/2 C. semi sweet chocolate chips
1 pkg. fresh raspberries
1 Tbsp. granulated sugar
Pinch of salt
For Tart:
1 1/2 C. all purpose flour
1/3 C. powdered sugar
6 Tbsp. butter
5 Tbsp. water
Pinch salt
DIRECTIONS:
For the tart dough:
Combine flour, powdered sugar, butter, water and salt in the bowl of an electric mixer. Blend dough until smooth. Remove from mixer, wrap dough in plastic wrap and chill in refrigerator for 30 minutes. Preheat oven to 425 degrees.
On a floured surface, roll the dough into an 11 in. circle and fit into tart pan with a removable bottom. Press dough firmly into pan.
Prick bottom of dough all over with a fork. Fit a sheet of aluminum foil snugly into the crust to prevent the dough from puffing up too much while baking. Bake for approximately 8 minutes, remove foil and bake an additional 6-8 minutes or until dough is slightly browned. Let cool completely.
For the Ganache:
Add tofu and sugar to the bowl of a food processor and purée until completely smooth. Meanwhile, melt chocolate chips in a microwave safe bowl for 1 minute, stirring every 15 seconds. Once melted through, combine with tofu and purée until smooth. Once blended, pour filling into tart and chill for at least 4 hours or overnight. Top tart with raspberries before serving.
Pecan Tofu Cookies
INGREDIENTS:
4 oz. (approximately 1/3 pkg) House Premium or House Organic Tofu – Soft, drained, (Or other brand, if you prefer)
2 cups flour
1 cup ground pecans
1 tsp. baking powder
2/3 cup brown sugar
1/4 tsp. salt
2 oz. (1/2 stick) butter, unsalted, cut into 1/2 inch cubes
2 tsp. vanilla extract
Flour and vegetable oil for dusting and greasing baking pan
Icing
10 Tbsp. powdered sugar
2 Tbsp. non-fat milk
Optional: 2~3 drops food coloring of your choice, sprinkles
DIRECTIONS:
Pre-heat oven to 325°F.
Add flour, pecans baking powder, brown sugar and salt into food processor. Press button for a couple of seconds until the butter breaks into small pieces.
Add tofu and vanilla extract into flour mixture. Mix until dough forms into a ball.
Lightly sprinkle flour on a large cutting board. Transfer the tofu/flour mixture to cutting board and press by hand until the mixture forms into a ball.Using a rolling pin, roll out the mixture 1/4 inch in thickness and cut with cookie cutters. Brush off excess flour on cookies. Place all cut cookes on a lightly greased baking pan.
Bake cookies in oven for 20 minutes until the edges become lightly browned. Remove and transfer onto wire rack.
Icing: Mix powdered sugar and milk in a medium bowl. Add food coloring if desired. Spread icing over baked cookies and place on wire rack until icing dries. Decorate with sprinkles.
