I went to lunch with my daughter this weekend and had the most delicious salad of baby kale, juicy strawberries and walnuts. As I was enjoying my healthy lunch, I remarked, “I’ve loved kale since I was a little girl when it was used primarily as a garnish. Other people pushed the garnish aside, but I ate it first and wanted more.” She thought this was strange, not that I liked kale, but that it was not a primary food. It’s only relatively recently that kale was promoted from its lowly status as a decorative food object to a superfood that is often the star of breakfast, lunch and dinner. As for fitness, when was the last time you signed up for step class, hopped onto your Gravity Rider or exercised to a Taebo video? Yeah, me too.
